There is a good thread over on SMC about the relative hardness and why Japanese steel can be sharper and hold an edge better vs. Western steel.
It's worth a look, so far it hasn't turned into a food fight.

Thanks Ken, that was a good read... And it stays civilized, even when they disagreed. How refreshing in a forum :-) i used to participated in numerous forums but got annoyed then turned off by some of the comenters, Sometimes it turned nasty and moderators had to step in and removed comments,, so sad :-(
